Ingredients
Preparation time: 15 minutes – Cooking time: 30 minutes
For a cake for 4/6 people:
- 150 g of sugar
- 150 g of flour
- 1 sachet of baking powder
- 160 g of soft butter (150 g for the dough and 10 g for the mold)
- 3 eggs
- 1 pinch of salt
- 1 vanilla pod
Preparation
Preheat the oven to 180°C. Butter a 24cm diameter springform pan . Split the vanilla pod in half and scrape out the seeds using a knife.
In a bowl, whisk the sugar and butter until creamy. Then, add the eggs one at a time, mixing well between each addition. Then, add the sifted flour, baking powder, vanilla, and a pinch of salt. Mix well until the batter is smooth.
Then pour the batter into the cake pan and bake for about 30 minutes. To check if the cake is cooked, prick it with a knife or wooden skewer. If it comes out clean, the cake is ready.
Let the cake cool for 10 minutes before removing from the mold.
How to personalize my homemade cake
You can :
- flavor the dough : Here I put vanilla but nothing prevents you from using cinnamon, four spices, ginger or cardamom powder, citrus zest, orange blossom water, flavorings (bitter almond), alcohols (1 tablespoon of rum, Cognac, Pastis, etc.).
- add fresh fruit (2 peeled, cored and diced apples, etc.) or dried fruit (prunes, dried apricots, etc.).
- add a touch of fantasy by covering it with homemade icing .
- vary the sugars (brown, muscovado) and the flours (white or semi-wholemeal)
- replace the butter with an equivalent amount of olive oil
- beat the egg whites until stiff to make them extra light (in this case it is not necessary to use baking powder)
